    selection of grape bunches before crush began.

    2.73 tons/acre; 402 gallons/acre.

    Sugar: Chardonnay 20.27 °brix - Pinot Bianco 20.00 °brix); -

    Pinot Nero 20.89% Total acidity (grams tartaric acid per 100 ml):

    Chardonnay 7.08 - Pinot Bianco 0.754 - Pinot Nero 0.670

    pH: Chardonnay 3.08 - Pinot Bianco 3.13 - Pinot Nero 3.07.

  • Vinification >

    The base wines, after fist fermentation, mature for 8 months in

    stainless steel vats that are temperature controlled, until the

    preparation of the cuvée. The cuvée Ca'del Bosco is the result of a

    knowledgeable blend of base wines kept in stainless steel vats

    and small oak barrels: a particular advancement bestows to the

    finished product a spicy personality, reinforced by the aging in

    bottles which are kept in cellars at controlled temperature of 53°F.

    For a minimum of 39 months prior to degorgement.

    It is made in small quantities, according to the client's request.
