Vinification >
The base wines, following the initial fermentation mature for 6 to
7 months in temperature controlled stainless steel tanks, until the
cuvée is prepared. The "Cuvée Ca'del Bosco" is the result of a
knowledgeable blend of base wines held in stainless steel tanks
and small oak barrels: a particular procedure which confers to the
final product a great personality supported by a development
which occurs in bottle, conserved in underground caves at a
costant temperature of 53 degrees. -

Fom 3th to 17th March 1993.

For a minimum 30 months prior to the degorgement.

Degorgement >
Done in small lots at the time of the client's order.

Dosage liqueur >
10ml. per bottle. It is composed only of wines matured in oak
barrels and a minimum quantity of sugar. -
Analytical data at bottling >
Total Acidity :0.635 grams tartaric acid per 100 ml.
Volatile Acidity: 0.035 grams acetic acid per 100 ml.
Alcohol: 12.5% by vol. pH: 3.06. -
Descritpion >
A light straw color with a gilded greenish reflection.
Its abundant with persistent and delicate bubbles. The aroma is
gentle, delicate and persuasive, with a pleasing sensation that
reminds one of fresh fruit (peach), flowers and of bread yeasts. Its
taste is very intense and well-structured, flexuous, gentle and
delicate. It has nice acidity and a long, persistent aroma. It is
suggested to drink at a temperature of 48 degrees. Excellent as on
aperitif, marries very well with many appetizers, risotto and
seafood dishes.
